The busy lifestyle we lead nowadays doesn’t allow us much time to prepare our meals. Especially in the morning, when we are all rushing to drink our morning coffee, prepare our kids to school, and then ourselves to work.

The busy-schedule most of us have in the morning doesn’t leave us with better options for breakfast than some sugary cereals or a random hodgepodge of things we find in our fridge.

However, breakfast is probably the most important meal in the day, so you must try to have a proper, healthy breakfast to start your day with energy. The recipe of the Greek yoghurt breakfast bark we present in this post is an excellent choice to begin your day.

The best part is that you can prepare it during the weekend, and store it in the fridge for the working days. In this way, you will have a healthy delicious, and quick breakfast every day of the week. You can also eat it as a snack during your working hours, or pack some for your kid as a perfect healthy school snack.

All you need is just 5 ingredients: Greek yogurt, granola, maple syrup, blueberries, and strawberries.

Greek Yogurt Breakfast Bark Recipe

Serves – 6

Ingredients

  • One and a half cup plain Greek yogurt
  • Half a cup granola
  • 3 tablespoons of maple syrup
  • 3-4 sliced strawberries
  • Half a cup blueberries

Preparation

Mix the maple syrup with the Greek yogurt in a bowl, until well combined. Then, pour the mixture on a baking sheet previously covered with parchment paper, making sure it’s spread in a thin layer. Finally, just sprinkle the granola, strawberries, and blueberries on top of it. Cover with aluminum foil, and keep the bark in the refrigerator for 2 hours, or leave it the entire night.

Once you ensure it’s frozen and firm enough, slice it in squares by choice. You can eat it immediately, or store it in the fridge in an airtight bag or container, and use it as a later snack.

Note: In case you don’t like to eat it too cold, take the bark out of the fridge several minutes before eating. In this way you will allow it to warm up and soften quickly. However, don’t leave it out too long as it will soften too much because of the yogurt, and lose its shape.
